I created this delicious fruit salad while writing my first book, Sound Mind Sound Body. It’s naturally sweet and flavorful … My girls love it!
CITRUS-MINT SALAD
INGREDIENTS
1 orange, sectioned and juice reserved
1 blood orange, sectioned and juice reserved
1 pink grapefruit, sectioned
1⁄4 cup reserved juice from orange and blood orange
1⁄2 vanilla bean, split
2 tsp. chopped fresh mint
PREP
In a small bowl, combine the orange, blood orange, and grapefruit. Divide between two serving bowls. In a small saucepan, combine the reserved liquid, vanilla bean, and mint. Bring to a boil over high heat. Reduce the heat to medium-low and simmer for 3 to 5 minutes, until liquid is reduced by half. Pour over the fruit and refrigerate for 1 to 2 hours. Serve chilled.
Makes 2 servings.
